The Very Best Lemon Biscotti

6 Eggs

11/2 Cups Sugar

1/2 Cup Winterhill Lemon Infused Olive Oil

4 Cups Flour 1 tsp Salt

3 tsp baking powder

1 Cup Almonds or walnuts chopped

Foil line 2 large baking sheets, grease lightly. Preheat oven to 350.In large bowl beat eggs until foamy about 5-6 min. Add sugar gradually, pour in Lemon Olive Oil. Combine all dry ingredients except nuts. With large spoon fold the flour mix into the egg, sugar, oil mixture. Fold in nuts. Spoon dollops of dough onto prepared pan. Form 2" x12" long logs about 4" apart. Bake 20 minutes or till firm. Remove from oven.CooI10-15 minutes. Using serrated knife cut w/gentle sawing motion 1 /2 -3/4" wide slices. Place slices back onto a baking sheet cut side down and toast in oven for 10-12 minutes more.
